Do we currently have a functional grinder wheel that can be used to grind down ceramics?

Not sure as to the scale of your project, but if I were in your position I would test a high grit or worn flap disc on an angle grinder. A dust mask would be a smart idea in that case.

I think there may also be a couple of lapidary wheels still sitting around on a cart in Ironworks that could be used on a bench grinder with the right adapter. (Same as John, Iā€™d definitely recommend a dust mask for that)

I was working with cabs from china plates this fall and we were using 60 and 80 grit lapidary wheels with water drips. You need eye protection and at least N95 masks or ventilators. You will create both mud and dust in the process.
